Green Eggs and Ham
This vivid and delicious brunch dish inspired by Dr Seuss is for kids and grown-ups to enjoy. The fresh green sauce completely transforms and revitalises these classic ingredients in taste as well as colour!
50g baby spinach
20g fresh parsley leaves
20g fresh basil leaves
3 tbsp grated Parmesan cheese 120ml olive oil
½ lemon, juice only
6 large eggs Salt and pepper 2 ½ tbsp butter
8 slices of thick cut ham
8 slices of toast
For the green sauce
Place the spinach, parsley, basil and Parmesan in a food processor with a blade attachment. Pulse to finely chop everything. With the motor running, slowly add the oil and lemon juice to combine.
For the eggs
Crack the eggs into a bowl and whisk, adding a pinch of salt and pepper, then fold in 60ml of the green sauce (the remaining sauce can be stored in the fridge for up to 1 week).
Melt the butter in a frying pan over a low heat. Add the eggs and cook slowly, stirring constantly using a spatula until eggs are softly set: about 10 minutes.
To serve
Warm the ham through in another pan with a knob of butter while you prepare the toast. Serve the green eggs on top of the toast with two slices of ham per person on the side.
